It was neat to read this article in the Times about whoopie pies. They were a part of my childhood in Maine, normally found at school bakesales and the local sandwich shop Big G's (which is similar to the sandwich shop in Williamstown in that the sandwiches are named after famous people).

I never made them when I lived in Maine, but I have a few times since I moved to DC to initiate some of you. They're pretty easy (and I don't bake) although assembly is somewhat labor intensive.

Recipe below the cut (or if you want to try them and ask nicely I might make them for you :) )

Wicked Whoopie Pies
This recipie was taken off the internet, it is not mine, credit goes to someone else (I regret I did not keep the website). I have used it sucessfully several times.

WHOOPIE PIE SHELLS
4 heaping cups sifted flour
2 teaspoons salt
2 teaspoons baking soda
1 cup cocoa
2 cups sugar
1 cup hot water
1/2 cup butter
1/2 cup shortening
1 cup sour milk or 1 tablespoon vinegar and milk to make 1 cup
2 eggs
1 teaspoon genuine vanilla or 2 teaspoons imitation vanilla

Mix together shortening, butter, sugar, eggs and vanilla. Sift together dry ingredients and set aside. Add milk, cocoa and hot water. Then add the dry ingredients. Scoop large rounded spoonfuls of batter onto a greased cookie sheet and space at least 2" apart. Bake at 350 degrees for 10 minutes.

WHOOPIE PIE FILLING
6 tablespoons fluff
4 tablespoons vanilla(this is not a typo)
4 tablespoons flour
4 tablespoons milk
4 cups confectioners sugar
1 1/2 cups shortening

Add all ingredients in a bowl and beat until smooth. Then place scoop of filling between two of the shells and enjoy!

By "fluff" do you mean marshmallow fluff? The stuff that comes in jars, and from which I understand people make fluffernutters?

I just sent that link to a college friend from Kenduskeag - she and another Dartmouth friend from Hamden got together a few weeks ago and had a major whoopie pie bake-off. They took two different recipes (two different cakes, two different fillings) and combined them all for four different combos, then did a blind taste-testing and found the best combined the cake from one with the filling from another. They then sent me their new recipe. I'm planning on making a batch of those soon, but I'll have to try your recipe, too!

Heh! A few months ago we found Whoopie Pies on the menu at Quinn's (http://www.quinnspubseattle.com/), one of our favorite restaurants here in Seattle. We were eating with [livejournal.com profile] mylene2k and it was our first time to the restaurants; she was pretty amused to see a childhood food on the menu at this upscale gastropub. They were great though!
